When tea lovers prepare single-origin tea from the Himalayas, the most common pitfall is treating all dry leaves and botanicals identically. Pouring rolling 100°C water directly onto fragile orthodox green tea pearls destroys months of patient mountain agriculture in thirty seconds.

The Delicate Nature of Orthodox Green Tea (80°C)

Our Lot 03 Green Tea Pearls from Fikkal are harvested in the early spring, when tender bud tips are rich in amino acids—specifically L-theanine, which provides the tea's sweet, savory umami taste. L-theanine dissolves smoothly in water heated to 75°C to 80°C.

However, harsher bitter polyphenols and catechins extract rapidly at temperatures above 85°C. When boiling water hits young green pearls, the delicate sweetness is overpowered by astringency. Allowing freshly boiled water to rest in your kettle for three minutes brings the temperature down to approximately 80°C, yielding a vibrant pale gold liquor with sweet chestnut notes.

Why Botanical Calyces & Roots Need 95°C

In contrast, botanical infusions such as our Lot 01 Hibiscus & Rhododendron and Lot 04 Lemongrass Ginger have completely different cellular structures. Rhododendron petals and dried ginger root have thick cell walls that lock in essential botanical oils and anthocyanin pigments.

Water at 90°C to 95°C provides the thermal energy required to gently rupture these cell walls, releasing tart organic acids and deep ruby hues into your cup. Steeping for a full four to five minutes allows the complex floral aroma to blossom without bitterness.

Altitude Boiling Physics in Nepal

It is worth noting that water boils at lower temperatures at higher elevations. In Kathmandu (approx. 1,400 meters elevation), water boils at roughly 95°C rather than 100°C. If you are brewing in Kathmandu or higher hill stations like Ilam, water right off the boil is already naturally primed for botanicals!
